The Burroughs has a different yet converging meaning for each of its two creators, Gary Brindle and Clarence "Gauge" Xavier.  These two foodies knew that a restaurant was in their future long before the name revealed itself.

  • For Gary, The Burroughs is an homage to his regional roots of New York City, New York.  Growing up in the countryside of the lights of the Big Apple, the varied tastes of the 5 Burroughs of New York City were his window to the world.
  • For Gauge, The Burroughs is family heritage, who’s last name just happened to be Burroughs.  His Great-grandmother Mable Burroughs-Williams was an accomplished restaurateur and cook during a time when black people were still segregated in Fort Worth, Texas.

The Burroughs Kitchen is a fusion of Gary’s Family recipes and Gauge’s great-grandmother’s soulful comfort food, re-envisioned for modern day while still respecting both of their regional distinctions. It is our love of food and people that we strive to bring only the freshest made ingredients, packed with flavors that rekindle old memories while at the same time create comforting new memories.  Join us as we take a journey into Soul Food Comfort with Eastern Inspirations.
